Overview

The Raleigh Room Manager coordinates the daily operations of the Raleigh Room and South Patio to ensure that the services exceed the expectations of guests. The Raleigh Room Manager manages the environment in the room (lighting, entertainment, lighting music, signage and room set-up), and monitors the productivity and qualitative work product for the bar and service staff. The Raleigh Manager will also be responsible for the recruiting, hiring, and training of all Raleigh and Raleigh Patio service staff. 

Responsibilities

  • Manages the seating, service, hiring, and training of all Raleigh Room bartenders, cocktail servers, and bar backs.
  • Create a culture within the department that maximizes performance through effective communication including meaningful pre-shifts, teamwork, regular performance feedback and incentive programs aligned with achieving business plan commitments.
  • Trains and Manages all COVA Related Policies (Customers Standing with Drinks, Server Greets, Signee Etc)
  • Plans and manages any special events that are taking place on South Patio, Raleigh Room or Raleigh Loggias (Garden Parties, Afternoon Tea, Ladies Night etc)
  • Responsible for insuring all Time and Attendance polices are enforced, to include correct job codes, daily time report monitoring, and reviewing weekly payroll
  • Develop a culture that promotes accountability, effective communications, service excellence, teamwork, performance feedback, recognition, mutual respect, and Associate satisfaction.
  • Hire, train and hold Raleigh Room staff accountable to deliver consistent quality service in all outlets meet business plan commitments.
  • Responsible for booking and evaluating all nightly entertainment in the Raleigh Room
  • Coordinates promotion of all events using the Raleigh room and South Patio  bar with Marketing
  • Orders Liquor for Raleigh Room and Becca following Company processes and procedures including manual checks, COD logging, etc.
  • Responsible for pick up of all ABC orders and ensuring with Business Manager or Security Officer presence, that the order is fully accounted for at time of delivery at the Hotel 
  • Responsible for maintaining all Raleigh Room uniform standards
  • Develops Seasonal Cocktails and documents recipes for Raleigh Room and Becca
  • Ensure that the outlet is set and maintained to approved SSI documentation to include music, lighting and table sets, back bars, and Bubble Night Décor. Advance any recommended operational changes to the Director of Restaurants.
  • Responsible for ordering, inventory and maintaining the prescribed PAR for all outlet service ware, tableware, glassware and outlet operating supplies.
  • Responsible for controlling the security, breakage and shrinkage levels of al liquor and bar supplies and equipment.
  • Complete daily inspection of the Raleigh room and South Patio as well as well as proper set up for events including signage and reset post event
  • Execute the Front of House Operating Plan to ensure predictability and consistency. Proactively anticipate and drive guest/service satisfaction and conduct root cause analysis on gaps in service delivery and advance corrective action or recommend changes to the operating/business plan to the Director of Restaurants.
  • Drive guest satisfaction by maintaining service quality standards by completing regular outlet inspections, updating, maintaining and verifying completeness of outlet checklists and cleaning schedules, ensuring completion of Brand and Company training programs, ongoing service training and executing approved corrective action plans as applicable.
  • Produce all weekly front of house schedules consistent with staffing models and advance timely for final approval.
  • Ensure the completeness and accuracy of recording all revenues, discounts and cash control procedures.
  • Critically analyze all metrics (including but not limited to Revinate, financial reports, average check report, Quality Assurance Inspections, mystery shops, and Associate Turnover), assess actual performance to defined benchmarks, identify variances, and advance corrective action plans when applicable.
  • Is present during peak periods which may also include when high profile/exposure, VIP events, holidays, large events and sponsored events are occurring on property.  This position is responsible for assisting the bar staff not to fulfill a shift but as needed for peak hours on high demand days.
  • Ensure all Human Resource practices and policies are adhered to with the Director of Human Resources to include recruitment, employment matters and training.
  • Collaborates with Tarnished Truth Spirit Specialist and Banquet Manager on beverage inventory efficiencies through a coordinated product offering strategy between all outlets
  • Participates in continuing self-study and education on all beverages
  • The Raleigh Room Manager is responsible for management and oversight of the wine programs for all restaurants, room service and banquets
  • Responsible for purchasing and maintaining proper pars for all wine programs in the hotel and serve as a property liaison with wine suppliers and representatives
  • Actively participates in monthly Beverage inventory per company standard and proactively follow up on Bevinco inventory needs and questions
  • Ensures wine list integrity and system accessibility through regular oversight and audit of lists and inventories in BirchStreet and Bevinco
  • Responsible for leading the wine program in both Becca and Raleigh Room. This includes wine list development, staff training, vendor relations, ordering and receiving, and pricing.

Qualifications

Experience3 years or more experience in High Volume Restaurant Business, Good knowledge of Restaurant Industry, Hands on experience reading and analyzing financial statements, Experience with menu created and beverage costing, 3 years experience managing a team of 10 or more people,College or Trade school education preferred
SkillBe proficient in Word and Excel, Robust knowledge of beer and wine
